Rossa di Treviso is a non-heading radicchio-type chicory from Treviso, Italy. It has long green leaves that turn burgundy-red in autumn. It's a good variety for winter forcing, which reduces the bitterness. 

To force radicchio, dig up the plants after hard frost in fall. Remove all of the green leaves, leaving a small core. Replant in pots, and keep in a dark basement or shed. New blanched leaves will appear in 2-3 weeks. 

If left in the garden, the biennial plants will bloom the following spring with pretty blue flowers on 4' stems. 

In Italy, radicchio is usually grilled with olive oil. We also add it to salads and stir-fries. It is spicy, tart and slightly bitter with a crisp texture.
