Florence fennel is a delicious vegetable with many health benefits. It forms an above-ground bulb with a crunchy texture and licorice flavor. The umbel flowers attract beneficial insects.

Fennel can be eaten raw in salads, if sliced very thinly. It's wonderful in soups and stir-fries. It can also be juiced in combination with celery, cucumber or apple. The leaves add flavor to steamed or baked fish. The seeds are used in sausage, breads, and Chinese cuisine. They also make a good tea for aiding digestion.

Harvest Florence fennel before the stems flower, or the bulbs will be tough. Also known as Finnochio and Foeniculum vulgare var. azoricum. Native to Italy.

Sowing Florence Fennel Seeds

Sow fennel seeds outdoors in late spring or midsummer for a fall harvest. Barely cover the seeds with soil. Thin to 4-6" apart. Full sun.
