The first time I rubbed and smelled the foliage of Szmaragd dill, I was instantly transported to my childhood. It reminded me of my mom's pickles.
Szmaragd is the most vigorous, bushy and fragrant dill I've ever grown. The beautiful, deep green foliage is perfect for market growers. In my garden, I got two harvests - the second one in fall after the first crop self-sowed.
The seeds are used in pickles and breads. The foliage adds flavor to soups, salads, vegetables and potatoes. I like to combine dried dill with Celtic Sea Salt to make a sprinkle for oven-baked fries.

In organic gardens, dill can be grown as a trap crop for aphids. The flowers attract beneficial insects, and the leaves provide food for the larvae of the black swallowtail butterfly.
