Crapaudine is the oldest known beet, dating back at least 1,000 years. It looks like a gnarled carrot with thick bark-like skin and lots of root hairs. It is usually roasted whole, then slipped out of the skin.
The bright red flesh has a rich earthy flavor. It is less sweet than modern beets but very delicious, making it popular in French cooking. The plentiful bronze-red leaves are also good.
Sowing Crapaudine Beet Seeds
Sow seeds outdoors 3-4 weeks before the last frost date, 1/2" deep. Thin to 3-4" apart. Thinnings are good for salads. Full sun.
